I think this has been one of my favorite recipes thus far. I changed it up slightly, but followed the recipe otherwise.

Instead of roasting chicken I chose to spatchcock 2 chickens on my smoker. We proceeded to devour one for dinner one night and then I froze the second one for something like this. I simply let it thaw in the refrigerator and pulled the meat off for the dish. A rotisserie chicken would work just as well.

The really wonderful part of this recipe has nothing todo with anything you put in the bowl. The magic for me was all in that green goddess sauce. You could put that @&$@ on anything. It’s amazing!

I like it so much I filled two squeeze bottles and put them in the fridge for future use. Soooooo good.

I also used my food processor to create riced cauliflower instead of brown rice to eliminate a bunch of carbs. Cook in the microwave on high for about 4 minutes and let cool. Make sure you use a cheese cloth or clean towel to ring out as much water as you can.

Assemble the bowls as the recipe suggests or add whatever mashup of vegetables you like. Squeeze some Green Goddess Sauce on them and you have a super tasty meal!
