Chia Seed Mousse

What? A dessert!! This one is brought to you from Jennifer. It was so good I had to have her write down the recipe so that I could share it. I’m not much of a baker or dessert maker so she gets all the credit on this one. I just get to enjoy this treats and enjoy it I did. It was wonderfully delicious. It had great texture and plenty of really rich chocolate indulgence. I think it is classified as dairy free and is really low in processed sugars as well. Give it a try if you want a little sweet in your week.

Ingredients

  • 1 can of Full Fat Coconut Milk
  • 1/4 cup of Hershey’s Special Dark 100% Cacao Powder
  • 1/4 cup Almond Milk
  • 1/2 tsp Vanilla Bean Paste (substitute vanilla extract if you don’t have this)
  • 3 tbsp Maple Syrup
  • 3 heaping tbsp Chia Seeds

Open the can of coconut milk and pour it into a large bowl. Make sure to scrape all the solid with the liquid from the can; this is a large part of the flavor and texture. With a whisk, whip the milk until it is smooth.

Add the cacao powder (with a sifter if you have one), milk, vanilla paste, and maple syrup. Whisk again until smooth and fully incorporated. It should be pretty fluffy at this point.

Lastly add the chia seeds and whisk again into the fluffy mixture. Scrape, with a rubber spatula into an airtight container and allow to rest in the refrigerator, overnight. This will allow the chia seeds to bloom. The next day you will have a really nice mouse with a chia seed texture that almost feels like tapioca.

Conclusion

I am not personally a big dessert fan but this recipe is really tasty. Mix in any variety of your favorite fresh fruits and this becomes almost irresistible. Jennifer made this for my family during a visit to their place and it was a great hit with them. Its certainly healthier than reaching for a bowl of ice cream or a piece of pie. I highly recommend you give it a try. Its really simple and hits the spot when you have a sweet craving.
